Home warranty - I recommend American Home Shield, I urge you to avoid at all cost First American (assuming they still exist).
Cabinets - if appliance garages fit into your layout they are very convinient, if not make sure you have lots of pull outs in your lower cabinets.
Remote fans - make sure to adjust the frequency on them. :) Don't want to turn on all the fans in the house if you don't need to.
Bar height - your cabinet designer will have the recommended heights for all bars, lowers, vanities, etc. For the most part you can trust them, but visit showrooms and confirm everything in person, if you can.
Bookshelves - by vary cautious of any built ins. Your idea of permanancy and the person you will eventually try to sell your house to are not going to be the same. Your pretty safe putting built ins around fireplaces and such, but don't go overboard. It's easy enough to screw shelves to a stud and just have a hole to fill in later.
